IaaS is infrastructure, so it is basically just the servers. The cloud provider will maintain those servers, but everything else is up to the customer.

PaaS is platform, and will have operating systems on the servers and something along the lines of development platforms. On CompTIA exams, keep DevOps in mind for PaaS.

SaaS is software, the highest of all levels. The cloud provider does everything except account creation and maintenance. Hardware (infrastructure), operating systems (platform), and applications (software) are all maintained by the provider. This requires the least effort on the part of the customer.
