I think mine will expire. I'm right now battle-focused on Microsoft Azure certs presently. It's fine. I might do Data+ later sometime, when time allows and it doesn't interfere with my Sea of Thieves habit.

Rather than letting the voucher expire, I'd give it a shot if I were you. If you don't pass you're not worse off than when you just let it lapse.
Note that I didn't say "if you fail" because in my view not passing an exam is not a failure but rather an intermediate step. At least you know what you're up against next time.
Finally, have sat and passed the Data+ exam myself, I think it is achievable. I prepared with the TTT materials (though I did have SQL knowledge before).
